
“Sugar Impersonators” Spiking Your Blood Sugar?
It’s no surprise that I always suggest staying away from sugar.
It causes all kinds of health problems… and a big one is that, in large amounts, it’ll send your blood sugar through the roof.
But sugar isn’t the only culprit
Those foods that act like sugars can also open a can of worms when it comes to your health.
These “sugar impersonators” can also send your blood sugar sky-high… that is, if you don’t eat them the right way.
At the top of the sugar-like foods list of sugar-like are foods like, crackers, rice, white bread, and potatoes.
In fact, a research team from Australian Catholic University, who published their work in the Journal of Clinical Nutrition, ran some tests and found that potatoes are among the foods that have the highest glycemic index.
This is nothing new.
Glycemic index is a measurement of how much a particular food increases your blood sugar. To create the Glycemic Index, researchers give people one food (like potatoes) and measure how much it changes their blood sugar.
But Glycemic Index isn’t the whole story.
The Australian research team were interested in something called Glycemic Response (which is the long-term blood sugar response to a food).
When these tested different foods, they found that (yes) potatoes and basmati rice did increase blood sugar.
But they also found that volunteers eating potatoes had better nighttime Glycemic Response than those eating rice.
Part of the problem comes down to how Glycemic Index is measured: they use just one food, and no one eats that way.
And that is the key:
Individual high-sugar-like foods are no big deal, IF you eat them with other foods!
Protein, fat, and fiber will all slow down the absorption of sugars into your bloodstream (and keep your blood sugar lower).
There’s also some research that (strangely) shows eating potatoes cold also slows down the absorption of sugars.
If you are going to eat the foods that act like sugar (grains, starchy veggies, breads…) then eat as small amount as you can AND eat them as part of a meal with a good quality protein, low-sugar veggies, and good fats.
That also means you don’t make a meal of chips or bread alone!
